SECRET FAMILY RICE

Ingredients:

  • 2 cups jasmine rice
  • 3 cups water
  • 1.5 oz of avocado oil
  • 1 tbsp salt or a little more/to taste
  • Optionally, a half onion

Instructions:

  1. Wash and rinse your rice in a strainer until the water runs more clear.
  2. Add your washed rice, water, oil, and salt to a medium sized pot and set your stove at 7.5 or medium high.
  3. Go do something while it cooks, stirring occasionally. Wait until there are little holes on the surface, from which bubbles form (see the gif). For me this is usually 10-12 minutes after turning on the heat. Once you see the bubbles, lower the heat to 4.5 or medium low.
  4. Cook for about 12 minutes. After that, mix and taste until it’s cooked to your liking. You can test if it’s done by sticking a spoon in and seeing if it stands. Enjoy!

This, bubbling, is what it should look like when you turn the heat down.

SECRET MYSTERY COOKIES

I came up with these myself! Pretty generic but the tin is emptied in a few minutes every time I make them. Bakes around 21 cookies, give or take.

Instructions:

  • Preheat your oven to 190 C or 375 F
  • 1 stick salted butter (soft)
  • 1 cup granulated sugar
  • Mix until well encorporated
  • Vanilla extract to taste
  • 1 large brown egg
  • 1/2 tsp baking soda
  • Buncha cinnamon to taste
  • 2 cups flour
  • If dry, add some heavy cream
  • Chill until easy to shape
  • Get an ice cream scoop
  • Scoop them neatly onto a tray with around an inch of space between them
  • If you want you can sprinkle some sugar on top
  • Bake for 13 minutes
  • Let cool and enjoy!

So so so good. You can add whatever toppings and mix-ins you want.

Examples: peanuts, chocolate chips, sprinkles, food coloring, sugar, caramel, etc...

BUTTER SQUARES

Super simple, super delicious! I need to make these more often.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 egg
  • 1 cup granulated sugar
  • 2 cups flour
  • 1 tsp vanilla (or more to taste!)
  • 1/2 tsp salt
  • Some more granulated sugar for dusting

Instructions:

Preheat the oven to 400 degrees. Chill a 9x13" baking pan in the freezer. Do not grease the pan.

Using a mixer, blend the butter, egg, sugar, and salt together until it is creamy. Add the flour and vanilla and mix using your hands until the mixture holds together in large clumps. If it seems overly soft, add a little extra flour.

Using your hands, press the dough out onto the chilled and ungreased baking sheet until it is even and 1/4 inch thick. Dust the top of the cookies evenly with raw sugar.

Bake at 400 degrees F until the edges turn a golden brown, about 12 to 15 minutes. Remove from the oven.

Let cool for about five minutes before cutting the cooked dough into squares. Remove the squares from the warm pan using a spatula.

HAM + EGG + RICE + CHEESE

Exactly what the title says. I’m a "picky eater" with sensory issues, and this is a quick and easy meal that I can eat every day, every meal.

How to make:

  • Add leftover rice (recipe here), diced ham, butter and shredded cheese to taste into a bowl
  • Make two or more fried eggs with runny yolks and shredded cheese on top.
  • Microwave your rice + ham + cheese for 30 seconds to one minute, depending on your microwave
  • Add the egg into the bowl and mix well, using the yolk as a sauce
  • Enjoy!

It's so delicious that every photo I have is of it being eaten.

PEASANT BREAD

Oh my god this bread is AMAZING. And surprisingly easy!!

Ingredients:

  • 4 cups (512g) unbleached all-purpose or bread flour
  • 2 teaspoons (10g) kosher salt
  • 2 cups (454g) lukewarm water (made by mixing 1.5 cups cold water with 0.5 cup boiling water)
  • 2 teaspoons (8g) sugar
  • 2 teaspoons (8g) instant yeast
  • Room temperature butter, about 2 tablespoons

Instructions:

In a large mixing bowl, whisk together the flour, salt, sugar, and instant yeast. Add the water and mix until the flour is absorbed.

Let it rise. Cover the bowl with a tea towel or plastic wrap and set aside in a warm spot to rise for at least an hour. (In the winter or if you are letting the bread rise in a cool place, it might take as long as two hours to rise.) To make a slightly warm spot for your bread to rise in, turn your oven on at any temperature (350ºF or so) for one minute, then turn it off. Don't let the oven to get up to that temperature cause' it'll be too hot. Just let the oven preheat for a total of 1 minute. It probably won’t get above 100ºF.

Preheat the oven to 425ºF. Grease two 1 qt or 1.5 qt oven-safe bowls with about a tablespoon of butter each. Using two forks, punch down your dough, scraping it from the sides of the bowl, which it will be clinging to. As you scrape it down, try to pull the dough toward the center. You want to loosen the dough entirely from the sides of the bowl and make sure you’ve punched it down. Then, take your two forks and divide the dough into two equal portions. Then scoop up each half and place into your prepared bowls. This part can be a little messy as the dough is very wet and slippery. Smaller forks make it easier. It’s best to scoop it up fast and plop it in the bowl in one motion. I usually use a silicone/plastic scraper.

Let the dough rise again for about 20 to 30 minutes on the countertop near the oven (or near a warm spot) or until it has risen to just below or above the top of the bowls. Don't do the warm-oven trick and don't cover your bowls for the second rise. Just set your bowls on top of your oven so that they are in a warm spot.

Bake for 15 minutes. Then reduce the heat to 375º, and bake for 15 to 17 minutes longer. Remove from the oven and turn the loaves onto cooling racks. If you’ve greased the bowls well, the loaves should fall right out onto the cooling racks. If the loaves look a little pale and soft when you’ve turned them out onto your cooling racks, place the loaves into the oven (outside of their bowls) and let them bake for about 5 minutes longer. Remove from oven and let cool for 10 minutes before cutting. Enjoy!!

AMAZING AWESOME OMELETTE

This is still the most amazing omelette I've ever had in my life (and I made it) despite having eaten thousands of omelettes in many different places. It's also super easy.

Instructions:

  1. In a bowl, whisk together eggs, finely diced slices of ham, and a generous amount of shredded cheese blend.
  2. Butter a pan set at medium heat and wait for it to start browning.
  3. Pour in egg mixture.
  4. Let cook until the top is kinda slimy, then flip and wait for a nice crispy bottom.
  5. Slide onto a plate and enjoy!!!

You can make it in any size!

CINNAMON PINWHEEL COOKIES

Ingredients

Dough

  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Filling

  • 2–3 tablespoons butter, softened
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon

Optional Glaze

  • Powdered sugar
  • Milk
  • Vanilla extract

Instructions

  1. In a bowl, cream together the butter and sugar until smooth. Add the egg and vanilla extract and mix until combined.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  3. If the dough is sticky (and it will be), chill it for 20 to 30 minutes.
  4. In a small bowl, mix the filling ingredients into a spreadable paste.
  5. Roll the dough out on a lightly floured surface into a rectangle about 1/4 inch thick.
  6. Spread the cinnamon filling evenly over the dough, leaving a small border at the edges.
  7. Roll the dough tightly from the long side into a log. Wrap in plastic wrap and chill for 30 to 60 minutes.
  8. Preheat the oven to 350°F (175°C). Slice the dough into rounds about a 1/4 to 1/2 inch thick.
  9. Place slices on a lined baking sheet and bake for 10 to 12 minutes, until edges are lightly golden. Sometimes I'll sprinkle sugar onto them if I don't want to make the glaze.
  10. Cool slightly before transferring. If desired, drizzle with glaze made from powdered sugar, milk, and vanilla.
